- 6medium bell peppers -- assorted colors
- 12 oz ground beef1 cup chopped onion
- 1 1/2 cups spaghetti sauce1 tsp salt
- 16 oz canned black beans -- rinsed
- 2 cups cooked white rice
- 2/3 cup shredded Monterey jack cheese
Slice the tops off the peppers. Remove seeds from bottoms. Carefully carve out eyes and a mouth on each pepper. Brown the ground beef and onion; drain off fat. Stir in spaghetti sauce, salt, beans, and rice. Fill pepper bottoms with mixture. Replace top slices. Place upright in a baking dish and top each pepper with cheese. Cover with foil and bake at 375ºF for 25-30 minutes. Serves 6.
Spaghetti and Eyeballs
- 1 1/2 pounds ground beef
- 1 cup seasoned bread crumbs
- 1 tablespoon ketchup
- 1 egg
- 1/4 teaspoon pepper
- 1/2 teaspoon oregano
- 7 ounces olives -- pimento-stuffed
- 14 ounces spaghetti sauce
- 3 quarts water
- 1 teaspoon salt
- 8 ounces spaghetti
- 2 tablespoons butter or margarine
Preheat the oven to 350 degrees. Mix the ground beef, bread crumbs, ketchup, egg, pepper and oregano in a large bowl. Then form the meat mixture into about 18 to 24 eyeball-sized balls. Press an olive into each ball, pimento side out. Place the eyeballs in a baking dish, cover them with spaghetti sauce and bake for 45 minutes. About 15 minutes before the eyeballs are done, fill a large pot with 3 quarts of water. Add salt. Set on medium heat and follow package directions to cook the spaghetti. Drain and transfer it to a serving bowl and toss with the butter or margarine.
When your eyeballs are done, remove them from the oven and spoon onto the spaghetti, irises up. Spoon sauce from the pan around them. Serves 5.

A Boo Beverage
I was also in search of a great fun drink to serve, and i found this!!! It is delicious, and super easy to make. It would be great with just a dab of whip cream and sprinkled cinnamon for a fall drink, or sprinkle w/colored sugar for a summer drink. the possiblities are endless....and so is the taste!
- 2 cups orange juice
- 2 cups milk
- 2 pint orange sherbet
- 4 ripe bananas
- 2 cups whipped topping
- 18 miniature chocolate chips
DIRECTIONS
In four batches, process the orange juice, milk, sherbet and bananas in a blender until smooth. Pour into glasses. Cut a hole in the corner of a pastry or plastic bag; fill with whipped topping. Pipe a ghost shape on top of each beverage. Position chocolate chips for eyes. Serves 9
